Rexburg business with new owners continues soup legacy, adds variety of sourdough bread and delicious cookies - East Idaho News

REXBURG — A local restaurant that holds fond memories for many eastern Idahoans, is now under new ownership and is carrying on some of the traditions created by its predecessor.

Soup for You?, located off of College Avenue in Rexburg, was originally owned and operated by Juston Leroy Wadsworth with Nikki Wadsworth. Juston was known as the “Soup Man” and passed away in December due to natural causes.

Eventually, the restaurant closed its doors until new owners came in and bought the business.

It’s now called Teton Sourdough Co. and is owned by Greg Jensen and his wife Heather.

“I had been in here to Soup for You? a couple of times and met Juston. Wonderful guy, made great food,” Greg said. “We came in to talk to (Nikki) about taking over her lease. She was really interested to see if someone would continue the legacy that Juston had built.”

As the Jensens became the new owners, they decided to create a new Facebook page called Teton Sourdough Co., which you can follow by clicking here.

“We didn’t want to erase Soup for You? Juston put a lot of time and energy building this following on Facebook and Instagram and so we decided to leave those properties as they are a tribute to him,” Greg said.

Greg and his wife did a remodel of the inside of the building. He said his wife has a gift for baking and he has tried to convince her for years to open a bakery. This new business is an opportunity for her to make her bread, which is perfectly crusty, chewy and golden.

There are sourdough boules, focaccia sourdough, jalapeƱo cheddar sourdough and even cookies.

“Our chocolate chip cookies have sourdough discard in them,” he said. “We are going to be rolling out pretzels, and cinnamon rolls, and all kinds of amazing things like croissants that will all be based on sourdough.”

The sourdough bread is paired with the soups.

“We still sell a lot of the soups that Juston did,” Greg said.

Some popular soups include the loaded baked potato, creamy tomato basil, and zuppa tuscana.

There are different soups to look forward to as well. Greg said they have added “New Soup Wednesday,” where they will start doing polls on social media to see what soup people in the community want them to make.

Fridays are a day to try chowders.

“I have added my own version of clam chowder. We do a chowder every Friday with very different types of chowder, whether it’s a New England, a Manhattan, or a salmon chowder,” he said.

Heather says she enjoys what she does and says her husband has encouraged her. She also credited that being a part of the BYU-Pathway program has helped her gain the confidence to run a business.

“If I wouldn’t have taken BYU-Pathway, I don’t think I would have had the courage to come in and start a business,” Heather said.

She is loving every moment of it, and it shows in the food she makes.

Teton Sourdough Co. has had a lot of support from the community.

“It’s been amazing. We are usually out of soup by 1 o’clock. We sell out of soup almost every day. I have got to figure out how to make more!” Greg said, laughing. “The community has been amazing supporting us.”

Teton Sourdough Co. has had a soft opening for its business for the past month. It’s officially open Tuesday through Friday from 10:30 a.m. to 2:30 p.m. for lunch.

Eventually, Greg says they plan to expand to breakfast menu items and add Saturdays.

The family-oriented business is encouraging people to come in and try the food.

“Come get a home-cooked meal. It’s made with love. We love what we do,” Heather said.
