DEXTER, MI -- The smell of fresh-baked bread will soon fill Dexter.

Owner Nick Raterman is having a grand opening for Raterman Bread Haus & Bistro on Aug. 19. The business right next to Erratic Ale Co. at 8080 Grand St. will sell fresh-baked sourdough bread, sandwiches, artisanal-style pizzas, soups, salads, German-style pretzels as well as gluten-free, vegetarian and vegan options.

The new bistro will feature indoor and outdoor seating as well as a fresh food menu that prioritizes using ingredients sourced from local farms.

Raterman began making bread during his college days at Michigan State University where he was studying mechanical engineering. He said he would often make fresh bread for his friends and family and was drawn to sourdough bread specifically because of his family’s German roots.

The new restaurant owner often jokes “the business exists because it was a hobby that got really out of control.” He officially launched his business around five years ago and began selling bread at farmers markets in Chelsea and Ann Arbor and to local businesses. Eventually, he expanded operations to the Washtenaw Food Hub.

Raterman is looking forward to serving Dexter and its surrounding areas. The Dexter resident said the space works for him and his family especially since his wife, Violet, owns and operates another local business in the city called Tiani Body Care.

While the new owner is excited to offer his bread in one spot, he said cooking has always been one of his passions.

“Food has always really been the driving factor and the bread was kind of a way to build a business to get to do that for myself,” he said. “I always had this dream when I was very young to become a chef or own a restaurant ... (but) I kind of shelved that as I got older. I think that it just kind of came back into fruition through this whole thing so I think that there was a part of me that was hoping that something like this would happen.”
