Publican Quality Bread

Publican Quality Bread plans to open an Oak Park location, joining a slew of Chicago restaurants opening suburban outposts.

The 1,600-square-foot bakery is set to open late fall at 211 Harrison St. The news comes about a year after Publican Quality Bread opened its first public-facing store in Chicago's West Town neighborhood. Before that, the bakery focused on whole sales, supplying Chicago’s restaurants.

“Publican Quality Bread is on the heels of celebrating 10 years of serving Chicago — first through the many incredible restaurants throughout the city, then through our bakery that opened in West Town last year and now, for the first very time, outside of the city limits,” Managing Partner Greg Wade said in a news release. “We’re honored to bring what we do best to the community of Oak Park.”

The bakery’s menu will be similar to the one in West Town, offering a smattering of pastries, long-fermented bread, loaves made with ancient grains and more. Deliveries will come each morning from the warehouse bakery in West Town. The Oak Park location will also serve grab-and-go options, salads, deli sandwiches and made-to-order sandwiches in the afternoon. It will also sell Roman-style pizza, which is sold by the cut, in the evenings through 8 p.m.

The bakery will also sell coffee, beer and wine. It will seat 20, and have a sidewalk patio that seats 40.

The Oak Park location will take over the former home of Rare Bird Preserves. Publican Quality Bread is part of One Off Hospitality, the group behind Avec, Big Star and The Publican. Wade has won a James Beard Award for baking.

With its Oak Park store, Publican Quality Bread will join somewhat of a migration to the suburbs. Chicago restaurants have been opening outposts there in the wake of COVID-19, seeking opportunities created by the reshuffling of the workplace.

Since hybrid work environments have become the norm and some city dwellers have moved to the suburbs, former commuters are going out for dinner and happy hour near home. It’s a contrast to the pre-pandemic days, when suburbanites would linger downtown after work. Restaurants once avoided suburban locations because they were worried the weeknights would be too slow. That is no longer a concern. 

Additionally, suburban locations often offer more space — for dining rooms, patios and parking lots—  lower rent and less competition.

Other city restaurants that have opened or are planning suburban outposts include Honey Butter Fried Chicken, Le Colonial and others.
