Houston's Bread Man Continues Growth with Cherry Block Co-Founder - Houstonia Magazine

The successful early-stage growth of Bread Man Baking Company continues, as owner Tasos Katsaounis announced Monday a rebranding with an upgraded facility and a new team member with plenty of clout in the local food scene.

First, the new Bread Man plant will open in the summer at 305 Gellhorn Dr, close to the east intersection of the 610 loop and I-10. It's a heck of an upgrade from its current facility at 9127 Stella Link Rd. That space is 4,753 square feet; the new warehouse is 40,800 square feet.

The upgrade comes at a time of serious growth for Bread Man. Over the last year, it secured a partnership with Whole Foods Market, selling its products in 60 stores throughout the Southwestern United States. The company is also stocked in six H-E-B locations. Plus, Bread Man can be found in dozens of restaurants and hotels across the city, and at the Urban Harvest Saturday Farmers Market. In 2020 alone, the company increased its sales by 64 percent.

To accommodate the workload, the new facility will include additional production lines, such as automated slicing and packaging systems, plus a 6,000-square-foot freezer. 

But that isn't all. In November Katsaounis added to his company by hiring Drew Gimma, former co-chef de cuisine at regarded Heights restaurant Squable. On Monday he brought in another hot name in the local culinary scene: Jess DeSham Timmons of Cherry Block Craft Butcher. DeSham Timmons has been named food-service sales manager at Bread Man, where she'll work to develop and strengthen connections with wholesale partners. 

"I’ve spent decades in the Houston restaurant industry in corporate and small business settings," DeSham Timmons said. "I'll be building a program that will serve our chefs and partners from start to finish, while enhancing their menu offerings. I’m thrilled to be on this side of the bread box and part of a business I’ve believed in and supported."

DeSham Timmons told Houstonia on Monday that she will continue to work with Cherry Block, which itself is growing with a new market, set to be unveiled this spring in Katy, and a restaurant opening this summer at The Stomping Grounds at Garden Oaks. Specifically, DeSham Timmons, who started Cherry Block as the chef to co-founder Felix Florez's rancher, said she will primarily support Florez behind the scenes.

The rebranding of Bread Man is courtesy design firm Primer Grey. The new look is a modern interpretation of Greek patterns and colors, a nod to Katsaounis's heritage. Get a taste of that look at the Bread Man website
