WEST FRANKFORT (WSIL) -- In this edition of A Recipe of Thanks, a Franklin County woman shared her fruity twist on bread pudding by adding apples and caramel.
West Frankfort resident Linda White has always enjoyed cooking and making her food from scratch. She bakes pies and cookies and makes cakes, dumplings, Italian Sauce, and much more, all homemade. It's her Caramel Apple Bread Pudding that will have your mouths watering.
For this dish, you will need 10 cups of bread crumbs, four beaten eggs, 1 1/4 cups of sugar, four cups of milk, and two teaspoons of vanilla. You will also need 2/3 cup of butter, one cup of chopped apples, 1 1/2 teaspoon of cinnamon, 1/8 teaspoon of cloves, and one jar of caramel sauce. Linda said she likes to use Mrs. Richards.
Linda also uses a 9x13 size pan that she greases with butter. She puts the bread crumbs in a large bowl and adds the chopped apples, which she sprinkles in the cinnamon and sugar.
Once that is complete, she puts it into a pan and combines sugar, cinnamon, and cloves. She then adds the beaten eggs, milk, and vanilla and then pours it over the bread crumbs and apples. She said to press down with a large wooden spoon, dot with butter, and bake for 350 degrees for an hour and a half. To serve, you can add whip cream and drizzle the caramel sauce.
Linda said she first started making this dish four-years ago. She made it with her daughter after seeing a regular bread pudding recipe in a local magazine. It feeds about 16 people. She said she plans to serve up her delicious dish this Thanksgiving.
