There are a lot of different ways to use Thanksgiving leftovers that go far beyond shoving a mix of turkey, stuffing, cranberry sauce, and mashed potatoes between a few slices of bread. (Which is delicious, BTW.) Another is option is a simple recipe for loaf of bread that not only uses leftover sweet potatoes, but also the jar of peanut butter that’s already sitting in your pantry.

While sweet potatoes and peanut butter might seem like a weird combo, the two make for a vitamin- and protein-packed loaf that’s so yummy. “Each serving contains about 19 grams of carbohydrate and 2 grams of fiber, which is important when striving to maintain healthy blood sugars,” says Amber Pankonin, RD, the registered dietitian and recipe developer behind Stirlist. “This bread also contains about 5 grams of protein per serving, which can contribute to fullness, making it a great breakfast or snack option.”

Making Pankonin’s Peanut Butter Sweet Potato Bread is easy. Because it requires a cup of mashed sweet potato, you can use what’s leftover from your Thanksgiving plate (or mash up a new batch). After combining the sweet potatoes with flour, creamy peanut butter, eggs, and some warming spices, you’ll be left with maybe the most delicious way to cut down on holiday food waste.

Peanut butter sweet potato bread

Ingredients
1.5 cups flour
1/2 teaspoon salt
1 tsp cinnamon
1/4 teaspoon nutmeg
1 tsp baking soda
1 cup mashed sweet potato
1/2 cup creamy peanut butter
2 eggs
4 tablespoons butter, melted
1/4 cup + 2 tablespoons stevia sugar blend for baking
1 tsp vanilla extract
1/3 cup roasted peanuts, chopped

1. Spray a 9 x 5 baking pan with nonstick cooking spray and preheat oven to 350 degrees.
2. Combine flour, salt, cinnamon, nutmeg, and baking soda. Set aside.
3. Combine mashed sweet potato, peanut butter, eggs, butter, stevia blend, and vanilla.
4. Add dry ingredients to your wet ingredients and mix until combined. Be careful not to over mix.
5. Pour mixture into baking pan and top with chopped peanuts.
6. Bake for 50 minutes and remove from oven.
