It's easy to blow past Anjou Bakery, but if you know, then you know. Located just off U.S. 2 in Cashmere (between Leavenworth and Wenatchee), it's a favorite of locals and hungry travelers alike — specializing in all things fresh baked and delicious.
"It starts with the bread, baguette sandwiches, the pastry things like cinnamon rolls, croissants, almond croissants and then the pie," said Heather Knight, co-owner of Anjou Bakery. "The grounding idea is basic, simple breads, pastry and something sweet. Everybody loves something sweet."
Knight and her husband, Kevin, opened Anjou Bakery in 1996 with the goal of building a business around the food they enjoyed when they toured around Europe as young adults.
"We did not have a background in food, but we're good learners, and we appreciate good food," said Knight. "We just knew what we wanted as the end product, and then we started to create it."
Now, more than 20 years later, it's a family affair, with the Knight's son, Simon, taking over bread-baking duties from his dad. Of course, the ethos hasn't changed. At Anjou, the focus is on making classic breads and pastries using traditional methods and the best ingredients.
"We do take the time. If you eat something of really good quality, you're going to feel good," said Knight. "I believe food is really, really important to your overall quality of life."
Here's a pro tip: the baguette sandwiches at Anjou are unreal good — especially the tuna sandwich. The secret ingredient is cultured European-style butter, which takes the sandwich to another level. It's simple, yet somehow utterly perfect. The same goes for pretty much everything at Anjou, which is why folks keep coming back time and time again.
"I feel so fortunate every day to come into contact with the people that we do. It's a huge swath of humanity," Knight said. "I mean, we get everybody from the person down the street to someone who has come all the way across the country for a vacation with their family. We've seen families grow up. It's just very special."
