We took our love of a classic banana bread and pumpkin to create to a fall quick bread that is soft, moist, and perfectly spiced. The pumpkin and banana help make this loaf moist while the banana also helps sweeten the bread so less sugar is needed. The pepitas on top are optional, but give it nice texture and a great little crunch. You could also sprinkle a little cinnamon-sugar on top! Of course, chocolate chips are always a welcome mix-in too!

Cooking spray

2 c.

all-purpose flour

1 tsp.

ground cinnamon

1 tsp.

kosher salt

1 tsp.

baking soda

1/2 tsp.

baking powder

1/2 tsp.

ground ginger

4 tbsp.

butter, melted

3/4 c.

packed brown sugar

1

large egg

1 tsp.

pure vanilla extract 

1 c.

pumpkin puree

1 c.

mashed bananas (from about 2 large bananas)

Pumpkin seeds

1. Preheat oven to 350° and grease a loaf pan with cooking spray. In a large bowl, whisk together flour, cinnamon, salt, baking soda, baking powder, and ginger. 
2. In another large bowl, whisk together melted butter, sugar, egg, and vanilla. Add pumpkin puree and mashed bananas and whisk until combined. Add dry ingredients and mix until just combined. 
3. Pour batter into prepared loaf pan and top with pumpkin seeds. Bake until a toothpick inserted in the middle comes out clean, 1 hour to 1 hour and 10 minutes. Let cool before slicing.
