After gaining a loyal following in San Pedro, Long Beach-born pastry chef Kristin Colazas Rodriguez is bringing her bakery back home with the opening of the second location of Colossus Coffee + Bread.
The new bakery opened on April 16 in a space that once housed La Strada, an Italian restaurant that closed in August after nearly 30 years in the city.
Originally opened in a narrow 700-square-foot space with a counter up front in San Pedro in August 2019, the second Colossus Bakery is located at 4716 E. Second St. in Belmont Shore and features an open kitchen concept, which means customers and people passing by will be able to see the baking in progress.
Customers will be able to order the baked goods Colossus has become known for, such as seasonal fruit-driven croissants, Country Loaf bread and the OG Cookie, plus coffee and espresso drinks created by Rodriguez’s husband and co-owner Nicholas Rodriguez, as well as some new menu items.
Jeff Paletz, who most recently worked as executive sous chef for Primal Alchemy Catering in Long Beach after working at places such as the Michelin-starred Michael Mina in the Bay Area, is the new location’s chef de cuisine.
His new menu includes hot and cold sandwiches, toasts, quiche, granolas and plans call for other items such as cured salmon and pizza nights.
