SAGINAW, MI — Most days, The Bread Guy offers freshly-baked baguettes, boule, croissants and other French- and European-inspired bread and pastries in Old Town Saginaw.

But on Saturdays, sourdough and brioche cinnamon rolls aren’t the only things Mitch Delemeester, the “Bread Guy,” is baking. He also offers made-to-order pizzas you won’t find just anywhere.

“Customers have really liked it. They’re excited to see the thin-crust pizza,” said the owner of the tiny artisan bakery, located at 411 Hancock St. “You can’t get this pizza, exactly, anywhere else around here.”

Like most things at The Bread Guy, it starts with the dough.

“We make the pizzas on Saturday, but we make the dough on Thursday,” Delemeester said. After proofing in the refrigerator for 48 hours, “we take that dough the day of and stretch it out into like a thin crust, or like a Neapolitan-style pizza.”

Next, he adds sauce made in-house, fresh mozzarella and other toppings and cooks the pizzas on thick baking stones at 500 degrees before sending them out the door.

Margherita pizza, topped with fresh mozzarella, tomato and fresh basil, is always on the menu and priced at $15. Other specialty flavors in the rotation include prosciutto with Kalamata olives and artichoke hearts, $16, and spicy salami with tomato, onion and basil, $16. The pizzas measure 14 inches and feed two to three people.

“Definitely, the Margherita is most popular. It’s simple, it’s good, it’s just kind of a classic,” Delemeester said.

The Bread Guy offers seasonal pizzas, too, and he’s not afraid to experiment with toppings that may be unfamiliar to some customers.

“During the summer, when we have the farmers market, we just go and get the best possible veggies that we can, whatever fun combination we can think of, and try it out,” Delemeester said. “We did a duck egg on the pizza one time, but I think people were a little cautious about that one.”

Customers are encouraged to call at least an hour in advance, or even the day before, to place their pizza orders.

The Bread Guy is open Wednesday through Saturday, and pizzas are available from 11 a.m. to 1:30 p.m. on Saturdays only.
