Food News: Chef Exits Squable to Bake With The Bread Man - Houstonia Magazine

Drew Gimma, whose bread-making skills have helped make Squable one of Houston's most exciting restaurants since it opened in 2019, has left the Heights establishment to join Bread Man Baking Company as its director of operations, a move announced late Sunday night.

"Drew is an incredible asset and addition to the Bread Man family," said Tasos Katsaounis, owner and founder of Bread Man. "I'm ecstatic to have his eye and dynamic expertise that will help us fine-tune different areas of business. He has the same high-standards and mentality, and he’s really going to help maximize the bakery's productivity and efficiency so we can continue making the best artisanal breads possible."

Gimma, who before his stint as co-chef de cuisine at Squable worked at Thomas Keller's Bouchon Bistro and Per Se, among other spots in New York City and elsewhere, joins Bread Man at a crucial moment. Last month, the company, which has quickly become one of the Bayou City's most popular craft bread enterprises, announced an expansion into 48 Whole Foods Market locations across the Southwestern United States.

Bread Man products are also currently found at six H-E-B locations across the city, at the Urban Harvest Saturday Farmers Market, and at White Elm Cafe Bakery in Memorial.

“I'm incredibly excited to join the Bread Man Baking Company team," said Gimma. "In a short period of time, Tasos has built a successful, growing bakery that is defined by its commitment to quality, staff happiness, and the constant pursuit of improving each day. These qualities align with my own ideals and I hope that the experience I bring to this position will help the bakery become more efficient and continue to grow while remaining true to its core values."


Popular hot dog eatery Good Dog will close its Montrose location at 1312 W. Alabama St. on Nov. 22. Owners Amalia Pferd and Danny Caballero say the challenges of paying rent in Montrose during the Covid-19 pandemic made it impossible to stay open.

“This decision comes with a heavy heart, but I want everyone to know we tried everything possible to keep our Montrose store open," says Caballero. "Unfortunately, with the amount of uncertainty these days, and our current rent rates, we're not in a position financially to renew our lease."

The owners say both the Good Dog food truck and the store's Heights location will remain open; in fact, the hours at 903 Studewood St. will soon extend with a brunch menu launching in the near future. Family packs and bodega items are also being sold at Good Dog Heights as a way to help folks during the pandemic.

And to help ease the blow for Montrose residents, Good Dog is offering a 15% total bill discount to any customer who can show proof of a 77006, 77098, or 77019 zip code through the end of 2020.
