Artisan bakery Rustica has announced a new collaboration with Bread Lab, the training and production facility for Patisserie 46 and Rose Street Patisserie.
Rustica has moved its production to the Bread Lab, on West Seventh Street in St. Paul, and will collaborate with the staff, share resources and develop new products.
Both businesses will continue to produce the products customers know and love, but the collaboration will allow for combining creative and physical resources to keep both strong for the long haul.
“The reality in the current environment for independent bakeries is stark,” Rustica founder Steve Horton said in a news release. “Bakeries are struggling, and survival is not guaranteed. This partnership is a way to preserve excellence, diversity and uniqueness in our food community.”
Rose Street and Patisserie 46 owner John Kraus is committed to training the next generation of bakers, and the goal of the Bread Lab has always been stated as such. Rustica will now be a part of those efforts.
“We have a chance to combine our teams and promote a craft that has stood the test of time,” Kraus said in the release. “There is no better time than the present to make an effort to raise the bar and push forward. The goal of the Bread Lab is to be an incubator for milling and baking and provides a training ground to educate for the future of our industry so that it may continue to provide pleasure and sustenance to our community.”
