This is the fourth location for the popular bakery spinoff of the Michelin-starred Manresa
Manresa Bread, the popular spinoff bakery from the Michelin-starred Manresa, is bringing its fresh-milled sourdough loaves and flaky croissants to Palo Alto.
The fourth location of the bakery will open in the former Mayfield Bakery space at Town & Country Village at 855 El Camino Real, according to the shopping center’s website.
The team at Manresa Bread declined to comment but confirmed the opening.
Avery Ruzicka is the powerhouse behind Manresa Bread, which started in Los Gatos and now also has a second bakery in downtown Los Altos and an all-day cafe in Campbell. It’s known for milling its own flour and using it to create top-notch naturally leavened baguettes and pastry classics like the kouign-amann (including a large Breton-style version the size of a cake) and ham and cheese brioche. Ruzicka has long played around with a range of grains, like einkorn loaves and hard red California wheat flour that go into the bakery’s almond croissants.
The Campbell cafe offers the largest menu, with breakfast sandwiches in addition to baked goods. The space at Town & Country is relatively small, but it’s unclear whether it will be mainly pastries and bread or offer more menu items.
Ruzicka got her start as a food runner at Manresa in Los Gatos and worked her way up to head baker. She started selling bread and pastries at farmers markets before opening the first bakery in Los Gatos in 2015. It’s grown tremendously since then, with national shipping in addition to the local bakeries. Food & Wine named Manresa Bread one of the country’s best 100 bakeries last year.
Manresa Bread is one of several new food tenants at Town & Country Village. It’s opening next to Wildseed, the plant-based San Francisco favorite.
