Vermont Business Magazine Blair and Rosalyn Hyslop, “couplepreneurs” from Sussex, New Brunswick, who are the owners of Mrs. Dunster’s Bakery, announced Thursday their intention to purchase all the assets of the Koffee Kup Bakery in Burlington, Vermont.
“We are thrilled to announce today that we have formed a new company, called North Atlantic Baking Company.” said Co-CEO Blair Hyslop, “We have been advised that North Atlantic Baking Company is the preferred purchaser of the Koffee Kup assets & we are focused on moving quickly to conclude negotiations which will lead to restarting operations very soon.
“The assets include Koffee Kup in Burlington, VT, The Vermont Bread Company in Brattleboro, VT, and Superior Bakery in North Grosvenordale, CT. Our plan is to operate the two Vermont Bakeries and enter discussions with third parties with the intent to sell the Superior Bakery in Connecticut.”
Vermont Commerce Secretary Lindsay Kurrle said today that the owners received approval Thursday on a Vermont Employment Growth Incentive award of $1.8 million. To receive the money they must reach intended employment goals.
"That was a key component in making this deal work. And we're really excited they are going to be doing business in Vermont and keeping that business going," Kurrle said.
The VEGI award will provide $1.2 million for the Brattleboro location and $580,000 for the Burlington location. Kurrle said these are just approvals for future incentive, so the new owners must hit and maintain their target employment numbers before the incentive is awarded.
The USA company will be named North Atlantic Baking Company but will continue to market the same baked goods that made the company a household name throughout New England under the Koffee Kup and Vermont Bread Company Brands. The company will be based in Burlington, Vermont.
Vermont Bread Company in Brattleboro and Koffee Kup Bakery in Burlington abruptly shut their doors on April 26 and laid off hundreds of workers in Brattleboro and Burlington.
According to the Vermont Department of Labor, 156 workers lost their jobs at Koffee Kup’s Riverside Avenue bakery on Riverside Avenue in Burlington and 91 workers lost their jobs at Vermont Bread’s bakery on Cotton Mill Hill in Brattleboro.
Employees did not have advance warning. Workers who showed up on April 26 were greeted with a closure notice on the door.
Legal action is under way on lost pay and benefits related to the layoffs. The state is also looking into whether the owner violated the WARN act, which requires a 60-day notice for large layoffs.
Meanwhile, North Atlantic Baking company is actively negotiating a leasing agreement with the receiver to facilitate a quick return to baking in the Burlington and Brattleboro bakeries, we are hopeful to have this completed within a few days. The lease agreement will allow us to quickly get employees back to work and products back on the shelves while we work through the formal transferring of assets, the details of which have been largely agreed to.
Rosalyn & Blair Hyslop will continue to run Mrs. Dunster’s, but will also become the Co-Owners and Co-CEOs of the North Atlantic Baking Company. In a statement released today Rosalyn said “We are excited to see the company once again become family owned. We already deliver our fresh baked goods to every store in New Brunswick, Nova Scotia, Prince Edward Island, and the state of Maine several times a week with Mrs.
Dunster’s and have dreamed for many years of expanding our reach to the rest of New England. We are ready to devote our experience, passion and resources to this project, and are excited to work with these talented and experienced employees in a positive, family-oriented workspace.”
In a move that surprised its customers, vendors and employees, Koffee Kup Bakery had very recently closed its doors, having been put in receivership.
“Despite the recent history, Koffee Kup Bakery and The Vermont Bread Company have a strong brand presence throughout New England,” said Co-CEO Blair Hyslop, “We look forward to working with the team of hardworking employees and distributors who produce and deliver the delicious assortment of baked products to market every day. We intend to continue their tradition of delivering high quality breads, rolls, English muffins and donuts to our loyal customers, while at the same time helping the company meet its full potential.”
Although the North Atlantic Baking Company and Mrs. Dunster’s will be separate companies with separate US and Canadian management teams, they are expected to benefit from each others expertise, distribution capabilities and product assortments.

Mrs. Dunster's story dates back to the 1960s in Fredericton, New Brunswick. Ingrid Dunster was famous around the neighborhood for her delicious homemade donuts. Mrs. Dunster’s operates a 30,000 square foot bakery, retail store and head office in Sussex, NB, and last fall announced the opening of a new 40,000 square ft. bakery in Moncton, NB, the largest commercial Bakery built in Atlantic Canada in 20 years.
