Avery Ruzicka’s wildly popular loaves and croissants are coming to Palo Alto.

The James Beard-nominated head baker for Manresa Bread will expand operations to a prime spot at Town & Country Village, taking over part of the former Mayfield Bakery & Cafe space. San Francisco’s Wildseed is opening a vegan restaurant at that corner of the center.

This will be the fourth Manresa Bread. The bakery was launched in 2013 by Ruzicka and David Kinch, chef-owner of the three-Michelin-starred Manresa restaurant in Los Gatos, as a stand at farmers markets where locals could buy breads they had enjoyed in his restaurant.

Two years later, their first brick-and-mortar opened in Los Gatos (276 N. Santa Cruz Ave.), followed by a Peninsula location in Los Altos (271 State St.). An all-day cafe came to Campbell (195 E. Campbell Ave.) in 2018.

Ruzicka’s team will be baking Sourdough Levain, Whole Wheat and other loaves with house-milled flour, along with Almond Croissants, Kouign Amann, Monkey Bread, granola and new bake-at-home brownie, cookie and waffle mixes. The cafe menu will include the Bacon, Egg and Cheese Sandwich with onion jam, Smoked Salmon Tartine, Coconut Pearls Breakfast Bowl and Quiche Lorraine. An espresso bar is also in the works.

A February 2022 opening date is forecast. The bakery will serve daily from 8 a.m. to 3 p.m.
