A former machine shop on Jensen Marina in Portage Bay is now a bakery serving up hazelnut butter toast and bratwurst sandwiches — blessed by its own patron saint and a stained glass window to match. Saint Bread softly opened last week at 1421 NE Boat Street, as reported by Seattle PI and Seattle Met.

The project is from the heavy-hitting baking team of Yasuaki Saito, Michael Sanders, and Randi Rachlow, a trio of friends who had worked together at London Plane. “We are excited to get back together and serve our community. We’re not much into competition and we’re just trying to do our best and make things we think are delicious,” Saito tells Eater via email.

The result is a menu that spans French, Japanese, American, and Scandinavian traditions, as the team drew inspiration from their heritages and experiences. Pastries include cardamom knots, chocolate croissants, and melonpan (that Japanese sweet bun is also the delivery vehicle for a steamed egg and cheese sandwich). Try toasts on freshly baked bread, with toppings from ricotta to avocado to smoked trout. The kitchen offers dishes like an okonomiyaki tortilla, along with grab-and-go items from salads to grain bowls to sandwiches.

On the beverage side, find Proud Mary Coffee and Rishi Tea alongside local beers like Holy Mountain & Lucky Envelope and non-alcoholic beverages from Lemoncocco to Dr Pepper. The plan is to eventually add wine and cocktails.

Saint Bread tapped Melissa Glenn and Jim Graham at GBA to design the space, along with the site’s master plan architects Weber Thompson. “We were all committed to keeping the machine shop’s character and adding to the history of craft on the Jensen Marina,” says Saito.

The bones of the original structure remain, from the exterior siding to the rafters and beams and the main entry’s sliding barn doors. That “Saint Bread” stained glass window is a collaboration between Factory North & Studio Superconductor.

“Jonny Ashcroft of Superconductor, who digitally painted our Saint Bread icon, asked his uncle Rick Ashcroft, a stained glass artist, to help us produce the window. It is beautiful and when the morning sun shines through it, the bakery is filled with colored light,” Saito says.

Saint Bread’s current operating hours are 8 a.m. to 2 p.m. Tuesdays through Fridays. Eventually, the plan is to open up additional days and hours once the Saint Bread team is in the swing of things. “We are looking forward to summer on the water,” says Saito, noting that the team is finishing work on a second patio to supplement a covered and heated deck. Just as the bakery incorporated the structure’s existing features, that new patio will be shaded with sails from the original boathouse.
