THERE is always something special when sharing a dish with family and friends. Or sometimes making a special delivery of a homemade baked treat. Many times it is the simple pleasure of bread.

Oat and Raisin Bread

Oat and Raisin Bread

BANANA NUT BREAD

• 3 large bananas (or 4 small bananas)

• 4 oz unsalted butter melted

• 1 cup granulated sugar

• 2 large eggs room temperature

• 1 teaspoon vanilla extract

• 2 cups all-purpose flour

• 1 teaspoon baking soda

• ½ teaspoon baking powder

• 1 teaspoon cinnamon

• ¼ teaspoon salt

• ½ cup chopped nuts (almonds, pecans or walnuts) tossed in a little flour

Preheat the oven to 350°F: lightly grease a 9×5 inch loaf pan and set aside.

In a large mixing bowl mash the bananas with a fork or a potato masher.

Add the melted butter to the bananas and whisk until combined. Add the sugar, eggs and vanilla extract and mix well.

Add the dry ingredients and mix gently into the wet ingredients just until combined.

Add the combination of chopped nuts and fold in using a spatula. Pour the batter into the prepared loaf pan.

Bake at 350°F for about 60 minutes or until a toothpick inserted in the centre comes out clean. Take it out of the oven and let it sit on the counter for about 5-10 minutes. Then transfer to a wire rack and let it cool completely.

BEER CHEESE

HERBED BREAD

• 3 ¼ cups all-purpose flour

• 2 ½ tbsp sugar

• 1 tsp salt

• 1 tbsp baking powder

• 1 ½ cups beer

• 1/3 cup melted unsalted butter

• ¾ cup grated parmesan cheese

• 1 ½ tbsp fresh chopped herbs (chive, thyme, chadon beni, parsley)

• Extra melted butter

Preheat oven to 375°F. Lightly grease the loaf pan and set aside.

Place the dry ingredients (flour, sugar, baking powder, and salt) in a mixing bowl and whisk together.

Make a well in the centre of the flour mixture and add beer, ¼ cup melted butter, grated cheese and herbs. Stir together until the dough just comes together. Be careful not to over mix!

Pour mixture into a prepared loaf pan. Pour a little extra melted butter over top and bake for about 1 hour to 1 hour and 10 minutes, or until a toothpick comes out clean when inserted into the centre of the loaf.

Remove from the oven and let sit for 1–2 minutes before removing from pan. Let cool until just warm to the touch before slicing.

Slice and serve

PUMPKIN

GUAVA BREAD

From Cup of Joe Caribbean

• 3 cups flour

• 1 tablespoon baking powder

• ½ teaspoon baking soda

• 1 ½ teaspoons salt

• ½ tsp ground cinnamon

• ½ cup milk

• 2 large eggs

• ½ cup unsalted butter, melted

• 1 tsp vanilla essence

• ¾ cup sugar

• 1 cup grated pumpkin

• 5–6 fresh ripe guavas

• 1/3 cup milk

Preheat the oven to 350°F. Grease 2 loaf pans (each 8 ½ by 4 ½ in.).

Combine flour, baking powder, baking soda, cinnamon and salt in a large bowl; set aside.

Cut each guava in half and remove the pulp with a spoon. Place the pulp in a blender with the 1/3 cup milk. PureƩ until smooth. Strain the guava pulp to remove the seeds and set aside.

Mix the ½ cup milk, eggs, butter, sugar, vanilla, guava pulp and grated pumpkin together. Add to the flour mixture and mix just until combined. Divide batter between prepared loaf pans.

Bake until golden brown and a toothpick comes out clean when inserted in centre of each loaf, approximately 55–65 minutes.

Cool loaves in pan for 15 minutes, then invert onto a cooling rack. Let cool until barely warm to the touch, about 10 minutes.

QUICK OATMEAL

AND RAISIN BREAD

• 1 ½ cups all-purpose flour

• 1 cup quick oats

• 2/3 cup brown sugar

• 1 ½ teaspoon baking powder

• ¾ teaspoon baking soda

• ½ teaspoon cinnamon

• ½ teaspoon salt

• ½ cup raisins

• 1 large egg

• 1 cup milk

• 2 tsp white vinegar

• 3oz butter or margarine, melted

• Cooking spray

Preheat the oven to 350 degrees F. Grease a loaf pan and set aside.

In a large bowl, place the flour, oats, sugar, baking powder, baking soda, cinnamon and salt and mix well. Add the raisins and mix into the flour.

Add the vinegar to the milk and let sit for a few minutes.

In a small bowl, whisk together the milk, egg, and melted butter.

Add the wet mixture into the dry mixture and stir with a wooden spoon or rubber spatula, just until fully incorporated. The batter will be lumpy.

Pour the batter into the prepared loaf pan and bake for 35-40 minutes or until a toothpick inserted in the middle comes out clean.

Let cool on a rack before slicing to serve.
