A new bakery is coming to town.

The international Cobs Bread chain will be setting up shop on 561 Hespeler Rd. next month. 

Terrell Thurston owns two other Cobs Bread franchises in Guelph and has been wanting to open one in Cambridge for years.

Since recently becoming a resident of the city, now is as good a time as any to finally open the doors on his own Cambridge bakery. 

"We were actually looking for a space in Cambridge before we opened in Guelph, but we're so happy to be able to bring fresh baked breads and goodies to the city," Thurston said. 

Originally slated to open on April 6, construction delays have pushed the grand opening back a few weeks to around April 24. 

Thurston plans to bring the entire menu over to the Cambridge location even experimenting with a few things. 

"We are going to be piloting a new plant-based cinnamon bun with a vegan cream cheese topping," he added "We have a lot of plant based items that we will be bringing to the Cambridge store."

Cobs, which operates 145 bakeries in Canada and over 700 around the world, bakes all of their pastries and breads in house and from scratch. From sourdough to hot cross buns, Thurston wants to have the freshest bread on the block, being the one stop shop for all of Cambridge's baked good needs. 

Giving back to the community that supports them is an important thing to Thurston and the team at Cobs. 

The two Guelph locations are currently hosting an Easter hot cross buns drive to raise money for the Guelph Humane Society; over the past five years, they managed to raise over $10,000. 

Keeping the same charitable streak going with this new location, they named the Cambridge Humane Society as the charity they would be donating to.

Unfortunately, construction delays have pushed them back beyond the deadline for the drive, but that doesn't mean he wants to stop giving. 

"We are going to be partnering with several local community organizations to donate food with our end-of-day giving program," Thurston said. 

The Cambridge Food Bank and The Bridges are involved in the program, but Thurston is open to other charities who wish join.
