These bread recipes are from the 75th anniversary cookbook from Bethany Lutheran Church in Nevis.
Boston Brown Bread
Marsha Wolff
2 Tbsp. molasses
2 cups raisins
2 cups water
2-1/2 Tbsp. shortening
Nuts (optional)
2 tsp. soda
1 cup sugar
2-3/4 cups flour
1 egg
1/2 tsp. vanilla
Boil molasses, raisins and water for 15 minutes and add shortening. Cool. Add flour, soda, egg, sugar, vanilla and nuts.
Bake in greased tin cans or small bread pans at 350 degrees for 40-50 minutes.
Peanut Butter Bread

3/4 cup sugar
1/2 cup peanut butter
1 tsp. vanilla
1-3/4 cup milk
2-1/4 cups flour
4 tsp. baking powder
1/2 tsp. salt
Cream sugar, butter and vanilla. Blend in milk gradually. Mix together flour, salt and baking powder. Add 1/3 at a time, beating on low speed. Spread in a greased loaf pan. Bake for 45-50 minutes at 350 degrees.
Strawberry Bread

3 cups flour
2 cups sugar
1-1/4 cup oil
4 eggs
1 tsp. cinnamon
1 tsp. salt
1 tsp. soda
2 pkg. frozen strawberries, thawed
Mix eggs and sugar. Add oil and beat well. Add strawberries and dry ingredients. Bake at 350 degrees for about 50-55 minutes. Makes 2 loaves.
Quick Whole Wheat Bread

1/4 cup sugar
1 egg
1/2 cup molasses
1 Tbsp. vegetable oil or margarine
1 cup whole wheat
2/3 cup white flour
1 tsp. baking soda
1/2 tsp. salt
Beat sugar and egg together. Add molasses and oil. Mix flours and soda together. Add the rest of the ingredients. Add salt. Blend well.
Put in greased floured loaf pans. Let stand for 15 minutes. Bake for 40 minutes at 350 degrees.
Date Bread

1 cup brown sugar
1 cup white sugar
2 Tbsp. butter
2 eggs
1 tsp. vanilla
4 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped dates
1 cup chopped nuts
2 cups hot water
Cream butter, sugar and eggs. Add vanilla. Sift the flour and salt. Pour hot water over chopped dates and add baking soda.
Mix flour with creamed butter and sugar and add the date mixture and chopped nuts.
Bake in a 325-degree oven for 1 hour in greased bread pans.
Banana Nut Bread

2 Tbsp. butter
1 cup sugar
1 egg
2 Tbsp. buttermilk
1 tsp. baking soda
3 ripe bananas
2 cups flour
1/2 tsp. baking powder
1/2 cup chopped nuts
1/2 tsp. salt
Cream butter, sugar and egg. Dissolve baking soda in buttermilk and add to the creamed mixture. Add mashed bananas and mix well. Add dry ingredients and nuts (do not use a mixer for this last step).
Bake in loaf pans at 350 degrees for 35-45 minutes.
